The Eskimo "Paradox"
Many years ago, scientists were puzzled by an apparent "paradox" that existed among a tribe of Greenland Eskimos. It was observed that despite the high levels of fat in their diets, the population had remarkably low levels of cardiovascular disease. Scientists found that the agents responsible for the low levels of disease were the Omega-3 fatty acids, unsaturated fats which are found in high concentrations in northern cold-water fish such as salmon, mackerel and sardines.
